8 Tbsp Hummus
1 English cucumber
4 plain rice cakes
1/4 cup Kalamata olives (optional)
1/4 cup feta cheese (optional)
Dash sea salt
Extra virgin olive oil (optional)
Spread hummus over top of each rice cake. Peel and slice cucumber in thin slivers and place atop hummus layer. Add the optional olives and feta. Sprinkle with sea salt and paprika and serve right away. Drizzle with extra virgin olive oil if desired.
