1 ¼ cups fresh blueberries
2 tablespoons fresh lemon juice
2 tablespoons chopped cilantro
1 seeded and minced jalapeno pepper (more or less depending on how hot you want it)
¼ cup diced red bell pepper
1 small shallot
½ teaspoon pure maple syrup
¼ teaspoon salt
1. Put blueberries in food processor. Pulse 4-5 times until berries are coarsely chopped. (Some berries will remain whole; do not over-chop.) Cut peach into 1/2-inch cubes.
2. Combine berries and peach in a medium-sized bowl with remaining ingredients. Mix well, cover, and refrigerate until ready to serve.
3. Great to serve fresh sliced avocado on the side. Serve with baked blue corn tortilla chips, pita chips, baguette, lettuce wraps, also good on top of grilled fish (tuna, halibut), or fish tacos, grilled chicken or pork chops or on goat cheese crostini!
