Gingered Fruit Salad with Fresh Herbs

Ingredients

2 cups pineapple, peeled & diced
1 cup honeydew, peeled & diced
1 cup mango, peeled, seeded & diced
2 Tbsp fresh basil, thinly sliced
2 Tbsp fresh lime juice
2 Tbsp honey
1 Tbsp fresh mint, thinly sliced
1 Tbsp crystallized ginger, minced
1 Tbsp red bell pepper, minced (optional)
1 Tbsp sesame seeds (optional)

Directions

Mix all ingredients (except sesame seeds) together in a large bowl. Let stand at least 10 minutes before serving to allow flavors to marry. Serve in a wineglass or parfait cup with sesame seeds sprinkled on top.
