Students and staff at Andrews University were challenged to Eat Local Tuesday for the third year in a row.
Hundreds were served lunch made entirely from ingredients sourced within 150 miles of Berrien Springs.
An all-vegetarian menu was served during Tuesday's Eat Local Challenge. But this year was a bit different. The meal was affected by a Michigan freeze and drought.
“This is the third year we've done this,” says Mark Daniels the General Manager. “We went back to our growers and said we need to buy your product, but they didn't have it because of the freeze or the drought and it forced us to source new growers that are also local.”
Andrews University President Niels-Erik Andreasen is on a quest to make Andrews the healthiest university in the United States.
